My super simple, fresh and healthy guacamole recipe

People often ask me what my favourite food is, and right now I would tell you it’s steak. But only because I think of guacamole as a side dish. I also adore it home made, but hate it pre-bought. Here’s my super simple, fresh and healthy guacamole recipe.

Ingredients (serves 2)

  • 2 medium avocados – make sure they’re ripe but lightly pressing on them and seeing if they’re squishy
  • 1 lemon
  • 2 tomatoes or a handful of baby tomatoes
  • 1 red onion
  • Coriander (AKA cilantro)
  • Salt + Pepper to taste

Recipe

  • Cut the avocados into halves lengthways and scoop out the greeny goodness. Place in a bowl and smash it up with a fork. Some people like to blend, but I enjoy chunky bits.
  • Cut your lemon and squeeze in half the juice
  • Add salt and pepper to taste
  • Taste it – I’m not super fussed on quantities and I always advise to constantly taste your stuff. You don’t need to eat a spoonful, just a tiny bit to check.
  • Dice red onion finely. I like it small so the taste gets distributed, but some people like chunky onion bits. If you don’t have red onions, shallots work well. If you only have a normal onion, they can be very strong tasting, so cut them up and then put them in a bowl of water for about 15 minutes. Pat them dry before adding. This should help take the sting away from raw normal onions.
  • Cut the tomatoes into small bits. Again, I like all my ingredients fairly fine, but if you really like it chunky then chop them up thickly.
  • Add both the onion and tomatoes and mix it around with your fork some more.
  • Taste and add salt, pepper and more lemon zest to taste. I like adding the lemon in gradually as I go through, because I think the acid can really take over if you add it all at once and it’s too strong. I like to start weak and add as I go along.
  • Chop up the coriander and add that as well.
  • Serve

I like to eat it spread on some sourdough toast with a bit of garlic butter. A lot of people love to add garlic into the guacamole itself, but I find raw garlic to not be as nice as the aromas I get from the cooked garlic on my bread.

You can add a lot of different things into guacamole, some people add paprika for instance. This recipe is a perfect base if you want to try out new things. It goes well with nachos, on toast or in a sandwich.
